Victoria Sandwich Cake

Ingredients

• 6 oz butter, softened
• 6 oz sugar
• 3 eggs
• 6 oz self raising flour (or all purpose flour with 1/2 tbsp baking powder)

Directions

1. Beat butter and sugar together until light and fluffy
2. Beat in eggs, one at a time until creamy
3. Sift and fold in flour
4. Pour mixture into paper-lined cake pans and bake at 350°F until inserted toothpick comes out clean
