Pumpkin Soup
Ingredients
- 2 lb pumpkin, chopped
- 6 oz potato, grated
- 4 oz onion
- 1 can (156 mL) tomato paste
- 4 cups water
- 2 tbsp Better than Bouillon (chicken)
- 1 tsp salt
- 1/2 tsp ground black pepper
Directions
- Put all ingredients in a large pot
- Bring to the boil, simmer until pumpkin is cooked
- Blend with immersion blender
