Pumpkin Fritters
Ingredients
- 1 lb pumpkin
- 3 oz sugar
- 1 egg
- 2 oz raisins
- 4 oz all-purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- vegetable oil (for frying)
Directions
- Boil pumpkin; drain well
- Mash pumpkin and sugar together while pumpkin is hot
- Puree pumpkin mixture with immersion blender until smooth (optional step)
- Once pumpkin mixture has cooled, stir in egg and raisins
- Blend flour, baking powder, salt, cinnamon and nutmeg; stir into pumpkin mixture
- Fry fritters in vegetable oil until cooked
