Powercakes
Ingredients
- 1 cup buttermilk
- 4 eggs
- 3 tbsp butter
- 2 tbsp brown sugar
- 1 cup rolled oats
- 1/4 tsp salt
- 1/2 tbsp baking powder
- 1 cup whole wheat flour
- butter for frying
Directions
- Put buttermilk, eggs, butter, sugar, oats and salt in a blender and blend until smooth
- Add baking powder and flour and blend until combined
- Cook pancakes in a skillet on medium heat until bubbles appear on the uncooked side, then turn over to cook the other side

Substitute buttermilk: 1 tbsp white vinegar + milk to a total of 1 cup
