Lemon Curd
Ingredients
- 1 cup sugar
- 1 tbsp lemon zest
- 1 cup lemon juice (~ 5 large lemons)
- 3 tbsp firm butter, cut up
- 5 eggs slightly beaten
Directions
- In a heavy saucepan, mix sugar, lemon zest and lemon juice with a wire whisk
- Stir in butter and eggs
- Cook on medium heat for about 8 minutes, stirring constantly, until mixture thickens and coats back of spoon
- Immediately pour into storage container
