Ketchup Cake
Ingredients
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 cup ketchup
- 1/4 cup water
- 1/2 tbsp red food colouring
- 3/8 cup butter, softened
- 3/4 cup dark brown sugar
- 1 large egg
- ~~~FROSTING~~~
- 3 oz cream cheese
- 3/8 cup butter softened
- 1/2 tsp vanilla extract
- 2 1/2 cups icing sugar
Directions
- Mix the flour, baking powder, baking soda, cinnamon, nutmeg, and ginger in a bowl
- In a separate bowl, mix together the ketchup, water and food colouring
- In another bowl, beat the butter and sugar until smooth
- Beat the eggs into the butter-sugar mixture until light and fluffy
- Mix the flour mixture and the ketchup mixture into the butter-sugar mixture until combined
- Put the batter into a baking pan and cook at 350°F for 18 minutes or until the centre springs back when touched lightly

- Whip the cream cheese, butter, and vanilla until smooth
- Gradually mix in icing sugar until light and fluffy
