Icelandic Pancakes
Ingredients
- 1 cup all purpose flour
- 1/4 tsp baking soda
- 2 tsp white sugar
- 1/4 tsp salt
- 3 eggs
- 1/4 cup melted butter
- 2 cups milk
- butter for frying
Directions
- In a large bowl, sift dry ingredients together
- Beat eggs and milk together in a separate bowl
- Pour melted butter into the wet ingredients
- Mix the dry and wet ingredients together
- Cook the pancakes in a skillet on medium heat until edges are condensed, then turn over to cook the other side
