Crumpets
Ingredients
- 1 cup warm milk 110 F
- 1 tablespoon active dry yeast
- 1 teaspoon sugar
- 2 cups white flour
- 1 teaspoon salt
- 1 cup warm water 110 F
- 1/2 teaspoon baking soda
- butter for greasing and cooking
Directions
- Put warm milk, yeast and sugar in a bowl. Cover and let it rest in a warm place for 10 minutes.
- Mix flour and salt together in a large bowl.
- Add the milk mixture to the flour, then stir and knead until the dough is smooth (5-10 minutes).
- Cover the bowl loosely with plastic wrap and leave in a warm place for 1 1/2 hours.
- Dissolve baking soda in warm water then add it to the dough.
- Beat the batter until there are no lumps.
- Cover batter and leave in a warm place for at least 30 minutes.
- Grease crumpet rings and heat them in a lightly-buttered frying pan.
- Pour crumpet mixture into each ring until half full.
- Cook each crumpet until bubbles appear on top, then remove the ring and cook the other side.
