Crumpets

  1. Put warm milk, yeast and sugar in a bowl. Cover and let it rest in a warm place for 10 minutes.
  2. Mix flour and salt together in a large bowl.
  3. Add the milk mixture to the flour, then stir and knead until the dough is smooth (5-10 minutes).
  4. Cover the bowl loosely with plastic wrap and leave in a warm place for 1 1/2 hours.
  5. Dissolve baking soda in warm water then add it to the dough.
  6. Beat the batter until there are no lumps.
  7. Cover batter and leave in a warm place for at least 30 minutes.
  8. Grease crumpet rings and heat them in a lightly-buttered frying pan.
  9. Pour crumpet mixture into each ring until half full.
  10. Cook each crumpet until bubbles appear on top, then remove the ring and cook the other side.
