Crepes

  1. In a large mixing bowl, whisk together the eggs and half of the flour until smooth.
  2. Gradually add the milk, water, and remaining flour; whisk to maintain a smooth mixture.
  3. Add the salt and butter; whisk until smooth.
  4. Add the baking powder and whisk until combined.
  5. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  6. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Notes

Variation use all-purpose flour instead of whole wheat flour; omit the baking powder. Source: allrecipes.com
