Crepes
Ingredients
- 4 eggs
- 2 cups whole wheat flour
- 1 cup milk
- 1 cup water
- 1/2 teaspoon salt
- 4 tablespoons butter, melted
- 2 teaspoons baking powder
Directions
- In a large mixing bowl, whisk together the eggs and half of the flour until smooth.
- Gradually add the milk, water, and remaining flour; whisk to maintain a smooth mixture.
- Add the salt and butter; whisk until smooth.
- Add the baking powder and whisk until combined.
- Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
Notes
Variation use all-purpose flour instead of whole wheat flour; omit the baking powder.
