Christmas Pudding
Ingredients
- 1 egg
- 7 tbsp (105 ml) vegetable oil
- 1 pinch cinnamon
- 1 pinch nutmeg
- 1 pinch allspice
- 1 pinch salt
- 6 oz soft breadcrumbs
- 6 oz light brown sugar
- 1/4 cup (70 ml) orange juice
- 1 tbsp Grand Marnier
- 4 oz raisins
- 4 oz currants
- 4 oz sultanas
- small cooking apple, peeled and grated
- 2 tbsp molasses
- 1/4 cup marmalade
Directions
- Mix together the egg and the oil
- Add all the other ingredients and mix well together, then leave overnight
- Next day, grease a 2 pint pudding basin and have ready a large piece of foil to cover the basin
- Stir the pudding again and spoon it into the pudding basin
- Cover with foil, secure with string and steam for 8 hours
- Remove foil, recover firmly then store in a cool dry place
- On Christmas day, steam the pudding for a further 2 hours before serving
