Banana Bread
Ingredients
- 3 or 4 ripe bananas (approx. 12 oz)
- 1/3 cup melted butter (3 oz)
- 3/4 cup sugar (6 oz)
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- pinch of salt
- 1 1/2 cup flour (8 oz)
Directions
- Preheat oven 350°F
- Puree banana with immersion blender
- Mix in melted butter, sugar, egg and vanilla
- Sprinkle baking soda and salt on mixture and stir in
- Mix in the flour
- Put in loaf pan and cook for 1 hour, or until inserted toothpick comes out clean

Alternative method: blend bananas, butter (no need to melt), sugar, egg, and vanilla in a countertop blender; sift together flour, salt and baking soda; stir in blended mixture.
